Collards are a variety of kale. It's a green plant grown in the Southern U.S., which is cooked and eaten as a vegetable. It's very similar to spinach.
Black-eyed peas (also known as cowpeas) are a legume, again grown in the Southern U.S. The beans are soaked in water overnight and are usually cooked with ham. They are very similar in taste to pinto beans.
